This orignal work of art depicts ol'Gin, a master of koji making. Here he is seen delicatley shaking the koji-kin from his tin, back and forth, up and down to the table end.

“For this series I wanted to keep the cats close to realism rather than caricatures ― I love imagining real cats performing the tasks of sake brewing, and I feel that cat lovers will enjoy this touch as well. The backgrounds were inspired by a trip to a participating brewery, which adds reality to the world of KuraCats, and hopefully invites viewers to immerse themselves in the scenes.” Erica Ward

Charles Release Note: 
Every time I visit sake brewery the Toji tells me how important Koji is to the sake making process. "if you can't make good koji rice, you can't make good sake". There's even the old saying in the industry, 「一麹、ichi koji 二酛、ni moto 三造り san tsukuri」to let everyone know, koji making is the most important step in the process.  I've worked over several koji batches and it's a meticulous process. When visiting smaller sake breweries you often see a shirtless experienced old timer demostrating his koji can shaking method which is presented as some elegant dance. This scene is a tribute to those working in the heat of the koji muro and their artful apporach to koji application. We have named this artwork:

日本酒造りで最も大事な作業は、「麹造り（麹・清酒）」と言われています。「一麹、二酛、三造り」は、「酒造りで大事なのは麹が一番だ」ということを表した酒蔵の言葉。酒蔵を訪ねるたびに、杜氏は酒造りにとって麹がいかに重要であるかを教えてくれる。「麹がよくなければ、おいしいお酒は造れません」と。私も何回か麹を作ったことがありますが、それはとても丁寧な作業です。小さな酒蔵を訪ねると、シャツを着ていない年配の人が麹モヤシ缶の振り方を実演しているのをよく見かけますが、それは優雅なダンスのように見せています。 このシーンは、熱気に包まれた麹室で働く人たちの、芸術的な麹の塗り方を見ることができます。私たちはこの作品を「麹作りの踊り The Koji Making Dance 」と名付けました。
